The Breakfast Burger is The Breakfast Bar's answer to one question: what happens when a brunch institution builds a burger from everything it does best? It starts with two smashed patties, pressed hard on a flat top to maximize crust and lock in a deep, caramelized sear. Layered on top is a fried egg, because this is still a breakfast spot and we're not apologizing for it. Then comes the move that sets this burger apart: our house-made Pig Candy. Thick-cut smoked bacon slow-coated in 100% maple syrup, brown sugar, cayenne, and red pepper flakes, sweet, smoky, and hitting with heat. It's been a standalone menu item since we opened. Putting it on a burger was inevitable. Underneath the patties sits a house-made potato pancake, crispy and golden, built to hold structure while adding a richness that most buns can't compete with. American cheese pulls it all together with melt, and Thousand Islands dressing gives it the acid and creaminess the whole build needs. Grilled onion, lettuce, tomato, and house-made pickles round it out before it all goes onto a brioche bun. The Breakfast Bar has been a Long Beach neighborhood institution since 2013, built on four generations of family recipes and a full bar. Everything on this burger, the pig candy, the potato pancake, the pickles, is made in-house. This is a smash burger built by a brunch restaurant that's been earning regulars for over a decade, and it shows.
